Winter Farming Blooms in Illinois Despite Chilly Temperatures

While winter's chill dominates the landscape, some farmers in West Salem, Illinois, are defying the cold to cultivate crops year-round. Initially grain farmers, the farm has expanded its operation to include the consistent growth of lettuce and greens. Successfully managing a 128-by-30 ft greenhouse, the couple behind this sustainable farming venture has turned it into a cornerstone of their business. 

Surprisingly, one of the farmers, not a fan of salads or lettuce on sandwiches, finds irony in growing greens. However, as a business venture, growing lettuce and greens has proven lucrative for the family. The greenhouse has empowered the farmer to transition from a sales job in town to farming full-time. 

The idea of growing produce year-round took root in 2015 when a discovery was made about a hydroponic tomato operation in Missouri. Proposing the construction of a greenhouse, the farmers initially chuckled at the idea. However, as they delved deeper, the potential became evident. 

"It was a way for us to supplement the two-row crop farm," explained the farmer. The farm's venture took flight in early 2016. While initially challenging to secure customers, the quality and freshness of their produce now draw in independent restaurants and caterers. 

The farm's romaine lettuce, though slightly pricier than its Californian counterpart, boasts extended freshness—a major draw for restaurants. The locally grown lettuce lasts longer, allowing establishments to purchase smaller quantities without compromising quality. 

Year-round, the farm cultivates various lettuces, kale, collards, and, weather permitting, spinach and arugula. Even during the winter with shorter days, they maintain consistent yields, ensuring a continuous supply. The community can access their fresh greens at the self-serve retail shed, open 24/7, excluding Christmas and Easter.
